    Tasting Notes

The nose has great aromatic complexity and pleasantness. The smells range from hints of tobacco, chocolate and licorice with hints of plum and dried fruit. The palate is rich with soft, sweet tannins and savory and persistent at the same time. It is a wine that expresses radiance and elegance.

    Vinification

The grapes are first hand selected in the vineyard and then collected and transported to the winery where we proceeded to de-stemming and crushing. The mash was transferred to stainless steel tanks and cooled to 8-10 ° C and macerated cold for the first 4-5 days, in order to exalt the aromatic part varietal and maintain greater integrity of the fruit. Later, with the start of the alcoholic fermentation, the temperature rose to about 28 ° C. During maceration, which had an average duration of 20 days, were made the appropriate punching and wetting of the marc in order to extract only the finest tannins. After racking, the wine was racked into new barrels, where by the end of the year has finished malolactic fermentation. At the end of refinement in barriques, lasted 14 months, the wine was bottled and left in the bottle for another 10 months before the market.

    Historical data

The farm The Mortelle was part of a larger complex, already identified on maps by Leopold II in the mid-800. The farm is located in the heart of Maremma, in the province of Grosseto, about 9 km from Castiglione. It stretches for 270 hectares of which 160 are planted with vineyards, primarily Cabernet Sauvignon and Sangiovese, as well as newer plants white varieties such as Vermentino, Viognier and Ansonica. The company was acquired by the Antinori family in 1999 with the belief that the area was highly suitable for the production of quality wines. Myrtle is the name of the wild myrtle, shrub that characterizes the coastal areas and is a symbol of the farm. The new cellar at Le Mortelle is mostly underground with a view to environmental impact as low as possible. E 'was built using thermoregulation as rocks found deep in the ground, with the greatest respect for natural balance and attention to their maintenance energy saving due to the production cycle to "fall", phytoremediation of water released back into the environment, use of energy derived from renewable sources only. The Farm is open to the public for guided tours and tasting by appointment, also you can buy wines and seasonal fruit at the store inside the farmhouse.
